Serve the pork belly with the sauce alongside. Remove the star anise and cardamom pods from the sauce, and pour the sauce into a bowl or gravy boat.Taste the sauce and adjust the flavors as necessary. Heat the pan on the stovetop, whisking in the mustard.Remove any excess fat from the roasting tray.When the oil begins to smoke, carefully place one piece of pork in the saute. Heat 3 tablespoons of the oil in a large saute pan over medium-high heat. Transfer the pork belly to a warm plate and set aside to rest.
